Marinated Grilled Salmon With Sautéed Oranges
" 4 salmon steaks
" 3 Sunkist oranges, peeled and thinly sliced
" 3/4 cup fresh-squeezed orange juice
" 2 tablespoons fresh chopped cilantro
" 2 cloves garlic, minced
" 1 teaspoon sesame seed
" 1/2 teaspoon vegetable oil
" 1/4 teaspoon ground cumin
" 1/4 teaspoon crushed red pepper
Makes 4 servings.
Arrange salmon steaks in a non-metal dish. In a small bowl, stir
together orange juice, cilantro, garlic, sesame seed, oil, cumin,
and pepper until well blended. Pour mixture over salmon; cover
and refrigerate 30 minutes to 2 hours.
Preheat broiler or barbecue (we recommend using a grill basket
if using a barbecue). Drain and reserve marinade. Broil salmon,
without turning, about 10 minutes. Brush twice with reserved marinade
until fish flakes easily. As salmon cooks, pour 1/3 cup of the
marinade mixture into small skillet; add orange slices. Cook and
toss gently over medium heat about 5 minutes. Serve salmon with
orange slices and sauce.
