Strawberry Bavarian Creme - Gourmet 12/70

1 PINT RIPE RED STRAWBERRIES
3/4 CUP SUGAR
1 LEMON'S ZEST, GRATED
1-1/2 ENVELOPES GELATIN
1/3 CUP WATER
1 CUP HEAVY CREAM, WHIPPED
1 LEMON'S JUICE

MASH STRAWBERRIES IN FOOD PROCESSOR. ADD SUGAR, ZEST, AND LEMON JUICE. SOFTEN GELATIN IN WATER IN DOUBLE BOILER OVER WARM WATER. ADD GELATIN MIXTURE TO STRAWBERRY MIXTURE AND CHILL UNTIL IT BEGINS TO SET. FOLD IN WHIPPING CREAM. POUR INTO A 5 CUP MOLD FOR FULL RECIPE. CHILL UNTIL FIRM.
